26 January

Sunday the weather was unseasonably warm. 

Joe and I went for a walk on the beach. 

We scrambled through the dune grass and shrubbery.

It was so much fun to be out of doors with him. 

We explored places for picnics

and found a few hidden away tucked away

down into the grasses and surrounded by scrub pines 

and wild rose bushes. 

Perfect for a summer afternoon picnic

when everything's in bloom.

We look like a couple of old folk out to pasture...

Our house is the big green one in the center of the picture.

I made baked egg cups...sausage, peppers, and onions, topped with eggs,

that I baked in a muffin tin.

I froze them and Joe was able to have a nice fresh breakfast when he got to work. 

I think I overcooked them a little bit as they were a bit rubbery.

Next time I think I'll bake it all in a baking dish so it turns out flat.

I drive Joe to the bus stop early...his bus leaves at 5:20 am

It's only a 5 minute drive. I come back and get ready for work,

drive to the train station and we come home together.

In the morning when we are both getting into the car

the January stars are strikingly beautiful.

It's nice to start the morning out star-gazing with my husband.

We didn't get to see the boys last weekend 

but it was nice to have a quiet and restful time 

to just hang around the house.

Bonnie sent me a video of Verne playing the ukulele

that we gave him.

It's the next best thing to me getting to see him.

  1. Sounds like a lovely way to spend Sunday...we drove thru beantown on our way back up to UNH! It was so warm and sunny!

    Oh! The caramel almond milk only has 4 grams of sugar per serving!!

  2. I grew up near a beach, and I am trying not to envy your access to one. :-) Sounds like a very pleasant excursion. I've seen recipes for baked egg cups on Pinterest and wondered what they were like. My oldest son makes breakfast burritos and freezes them for breakfast through the week.
